What is Tom Collins?
Tom Collins is a classic cocktail born in mid-19th century London, considered the quintessential gin-based long drink. It harmonizes the aromatic botanicals of gin, the bright tartness of fresh lemon, and the lively effervescence of soda water.
Several theories surround its name, but the most famous is the "Great Tom Collins Hoax" of 1874 that swept New York. Pranksters would tell their friends in bars, "A man named Tom Collins is talking trash about you at the bar next door." The friend would rush over and demand, "Where's Tom Collins?" — at which point the bartender would serve this very cocktail.
The drink was originally made with Old Tom Gin, a slightly sweetened English gin, which is the source of the "Tom" in its name. When prepared with whiskey it becomes a John Collins; with vodka, a Vodka Collins.
Today it's most commonly mixed with London Dry Gin. The freshness of lemon, the gentle sweetness of simple syrup, and the cooling fizz of soda make it a beloved summer staple. It is recognized as an official IBA (International Bartenders Association) cocktail.

Tom Collins Recipe
- Fill a highball (Collins) glass to the brim with ice cubes.
- Pour in 60ml of dry gin.
- Add 30ml of freshly squeezed lemon juice.
- Add 15ml of simple syrup and stir gently to combine.
- Top up with 90ml of chilled soda water.
- Give one or two gentle stirs with a bar spoon to preserve the carbonation.
- Garnish with a lemon slice and a maraschino cherry, then serve.
Always use freshly squeezed lemon juice for the brightest aroma. Adjust simple syrup in 5ml increments if you prefer it sweeter. For a more authentic flavor, try Old Tom Gin instead of London Dry.
